I talked to Jeremy today. The cost is less than I expected. Basically, I set the price per person and number of courses, and he goes from there. He said he could do a very nice dinner for $100 a head, but I will go higher than that. The higher I go per head, the more extravagant the meal and # of courses.
At $150 a head for four people, if he spends even $400 on just the groceries, he can prep a pretty nice 5-6 course meal. Four filets and four lobsters will run a max of $130 (for example).
I told him it's his choice of what to serve and the few things we don't care for. I really don't want a steak. I could go for an app with steak in it.

check out Chef Nino. Did a really good job for 2 parties. Helps you create menu and "teaches" you how to make the dishes.

It's all set up. We are having a 6-course meal (2 apps, soup, salad, entree, & dessert) for $255 for me and my wife, other couple not making it.
Jeremy came by, checked out my kitchen, discussed the menu, etc.
He was booked the week of Valentine's (Mardi Gras), so we are doing it next Friday the 2nd.

He submitted one menu that sounded amazing, but my with is a little picky, so we settled on this one.
Here is the menu:
First & Second Courses:
Applewood Smoked Bacon Wrapped Shrimp with a 10 year aged Balsamic Drizzle
Sesame Soy Alaskan King Salmon Tartare on Sea Salted Rice Crisp with sriracha balsamic redux
Third Course:
Smoked Roma Tomato Bisque
Fourth Course:
Organic Mixed Greens with Cane Infused Balsamic Vinaigrette, sundried cranberries, pink Himalayan sea salted cashews, red onion slivers, & 8 year aged white Irish cheddar
Fifth Course:
Filet Au Poivre with Butter Poached Lobster Meat and Maitre D’Hotel Butter
Herb Roasted Asparagus and broccoli raab
Bacon Scented Sweet Potato Hash

Very good friend of mine. Would recommend. He's my fantasy football league we are so close. Brings his fryer over to the house and cooks something every year for us. He's so good that he wins the league and doesn't even draft his own team haha.
