I made a duck/andouille jambalaya last year. Used duck fat to sauté the trinity. I made 5 gallons of that and 5 gallons of shrimp jambalaya. None of the duck made it for leftovers. Overwhelming decision, duck was best.

Duck jambalaya is damn delicious.
Poule d’eau jambalaya is also good, but some uppity folks turn their noses up at eating coot. It can be on the fishy end of the spectrum, but lots of parsley/green onions, and a hit of acid (lemon juice, a splash of red wine in the water added to cook the rice) will balance the poule d’eau aroma.

Growing up in the nola area it seemed like most jambalaya was red.
Been living in Gonzales 13 years, all jambalaya i see is brown.
Brown is better

I've always said this to people.
You'll find red mostly in and around Orleans Parish.
You'll find brown mostly in areas to the west of New Orleans.
You'll find white all over by people that have no clue how to cook.
eta. My personal preference is brown.

I have a friend in Hackberry who’s father make a poule d’eau jambalaya and a great gumbo. He only uses the breast and man it is good. Uses his own rice from his farm. I could eat that right now.
