Ready to go easy apps

What are some good ideas for easy appetizers that can be thrown together for impromptu get togethers. Ideally with ingredients that can easily be kept on hand. Cheese board is a great one, but all I've really been able to come up with so far, I was wondering if anyone else had any ideas.

There's always the easy block of cream cheese topped with Pickapeppa sauce or pepper jelly served with crackers.
Slice a baguette and toast the slices. Get a good quality store bought pesto (I use the Rana brand in the refrigerated section). Spread a layer of pesto, top with a slice of fresh mozz and a few slices of cherry or grape tomatoes.
Get a log of goat cheese and place it on a platter. Score it a bit on top. Chop parsley and whatever other fresh herbs you like, garlic if you want and mix it all with some olive oil. Spoon it on top of the cheese and sprinkle some coarse salt on top. Serve with crackers or baguette slices.
Bake a round of brie with whatever topping you like.
You can load many things in those mini phyllo dough cups and serve hot or cold. If using them for a cold appetizer, I like to crisp them up a bit on the oven first. They're a little doughy otherwise for my taste.

Bacon wrapped dates. It’s only 3 ingredients, bacon, dates, and goat cheese.

Lettuce cups with a chopped shrimp mixture (a little red onion, red bell pepper, pineapple, lime juice, and seasoning. Bibb lettuce is good for it.

Hummus and carrots is a pretty good one. Get a few cans of chickpeas and tahini both of which will keep in your pantry indefinitely. Then just whip tahini and lemon juice in a food processor, then add olive oil seasoning and chickpeas. Look up the process online, it's not hard and turns out really good. Pita or Naan make for good dippers if you actually plan ahead but carrots work just fine and are usually in the fridge

I don’t make my own hummus but eat this for lunch some days. Sea Salt pita chips as well. Celery or cucumbers are good with the hummus as well.
