It is the new "it" way to cook steak. Instead of searing first and finishing in the oven you reverse the steps. It gives more control over the Maillard reaction and lets you get a darker more aromatic finish on the steak. The oven (indirect heat) is done relatively low say 275F and it works better with thicker steaks. The downside is it takes quite a bit more time.

It's always nice to see other people go to town on your meat, but it must have been especially gratifying to put it in your own mouth...

I am curious what you think a reverse sear is. In a restaurant, they will usually cook to temp in the oven then sear. In a reverse sear bringing the meat up to internal temp is done with indirect heat either via oven or using a portion of a grill as an oven.
