Raisin bread grilled cheese?

Has any of you baws ever make one? What cheese would you suggest? All I have is mild cheddar. I'm not sure if that's the best cheese to accompany raisins and cinnamon.

Thoughts?

I'm sure mild cheddar is good. I've never done it with raisin bread but I'll spread some jelly on top my grilled cheese. I love the sweet / salty combo.

Grilled ham and cheese sandwich with raisin bread is good. I just use chisesi ham and a kraft single.

Now, you have me craving raisin bread with cheese and bacon. In my mind, I'd love to try a blue cheese. Maybe gruyere or brie as mentioned. Gotta get some raisin bread now.

Humbolt Fog would be a good goat cheese to use or Saint-André if you're feeling decadent and don't like chevre!
