The breading is a mix of pork rinds, flax seed, and parmesan cheese.
Rao's Tomato Basil is the best store bought sauce I've ever had. It's also the lowest carb count. It's expensive ($8-9 per jar) but worth it.

Yeah, so back on the wagon for over a week now...and feeling good again. I think I'm going to make some sort of pizza this week...I have a killer recipe for some pizza dough if any of y'all keto guys need a fix for that craving...

Low Carb Pizza Dough
That's a link to the place I found it:
1 1/2 cups shredded cheese (a mixture of mozzarella and cheddar is best) 3/4 cup of each
1 dollop of cream cheese (1-2 Tbsp) I use 2 tbsp
3/4 cup plus or minus 1-2 Tbsp almond meal
1 egg
Preheat oven to 425 degres.
Place the cheese in a med bowl; microwave till melted. LET IT COOL enough to handle with your hands
Once you can handle it safely, add the cream cheese and egg and almond flour; mix with your hands until it forms a ball. This will be quite sticky at first; almond meal varies from batch to batch, so add carefully until you get the right consistency.
spread the dough out on parchment paper; don't worry too much about making it fit the cookie sheet, just spread it out fairly thin and even. Place in oven and bake till edges start to turn golden brown.
top with your favorite toppings.
Return to the oven on the top rack till cheese is melty and the edges of the crust brown nicely.

Low Carb Pizza Dough
That dough is like 1200 calories before you even top the pizza.
I take the easy way out and make pizzas on top of these Joseph's flax pitas (from Walmart or Dorignacs) (60 cals, 2F,6P, 4g net carbs each) or the Damascus Flax Rollup (from Costco) (80 cals, 3.5F, 7P, 5g net carb per half sheet). With each of these, I bake for a couple minutes to crisp up, then take out and top, then put back in with oven on broil.

That pizza will typically last me 2-3 meals though, so it's really not that big of a deal. I feel ya though, do what works for you

Any of you try the crust made out of chicken breast? A diabetic friend uses it. Its pretty good and packs a lot of protein.

Yea its not bad. Better than cauliflower crust for sure. Cauliflower crust is a pain in the arse to make.
