Eggplant lightly kissed with almond flour, pan fried, then layered with a shrimp and sourcream, horse radish, cayenne, and paprika dressing. Little green onion as a garnish.
You could add crabmeat and kick it up a notch. I may do that next time.

my staples:

chicken wings (unbreaded and with a buffalo sauce)
caesar salad with chicken
chipotle (or equivalent) bowl or salad with double protein, no rice or beans

This was a keto eggplant idea I had from a dish Fremin's makes.

They use fried green tomato in the stack, diff. kinds of cheese, and a marinara with breaded eggplant, shrimp, and crabmeat. This was dialed down for keto, but still good.

I've been ignoring my lose it app and not recording what i've been eating and it's slowing my progress clearly.

I need to do keto for a few days to speed up things.

Ran a mile to see where I am today to also speed things up.

1 mile run @ 9.57 min. My record on phone is 9.38 for a mile.

I don't run at all so this is new. Maybe if I record it here then I can keep it up.

I had perfect eating....even went to a buddy's 40th party last night and just ate the fajita meat and squash and onions. Had a couple vodkas. 1 beer all weekend.

Made my favorite keto recipe today.


Ruled.me's keto chicken parm

Got a package of chicken breasts from Sam's. Cut up 3 breasts and pounded out 12 pieces of chicken.

Made the breading mixture in a food processor. Dipped the chicken in the egg, then the breading, then placed on the foil. Put in fridge til I was ready to cook later at my sister's house.

Used some avocado oil and pan fried in an enameled cast iron pot. Topped with sauce and cheese and baked for 10 minutes. Made some broccoli as a side dish.

The Preparation

The Chicken
3 Chicken Breasts
Salt and Pepper to Taste
1 cup Mozzarella Cheese

The Coating
2.5 oz. Pork Rinds
1/4 cup Flaxseed Meal
1/2 cup Parmesan Cheese
1 tsp. Oregano
1/2 tsp. Salt
1/2 tsp. Pepper
1/4 tsp. Red Pepper Flakes
1/2 tsp. Garlic
2 tsp. Paprika
1 large Egg
1 1/2 tsp. Chicken Broth

The Sauce
1/4 cup Olive Oil
1 cup Rao's Tomato Sauce
1/4 cup Oil
1/2 tsp. Garlic
1/2 tsp. Oregano
Salt and Pepper to Taste

The Execution

Grind up pork rinds, flax, parmesan cheese, and spices in a food processor.
Slice chicken breasts in half or in thirds and pound them out into cutlets.
In a seperate container to the coating, crack and egg and whisk with 1 1/2 tsp. chicken broth.
In a saucepan, combine all ingredients for the sauce and whisk together. Let this cook for at least 20 minutes while you are making the chicken.
Bread all chicken cutlets by dipping into egg mixture, then dipping into the coating mixture. Set aside on a piece of foil.
Heat 2 tbsp. olive oil in a pan and fry up each piece of chicken 2 at a time. Add more oil as needed (I used 1/4 cup in total).
Set pieces of chicken into a casserole dish, add sauce on top, and then sprinkle with 1 cup of mozzarella cheese. Bake at 400F for 10 minutes or until cheese is nice and melted.
