Pumpkin water: what to do with it?

I roasted a medium pumpkin on Sunday. After pureeing and allwoing it to drain, it yielded 2.25 cups of puree and 4 cups of water. I froze both for now, but the intention is to make some pies with the purree.


Anyone have ideas or have actually used this in recipes? Off the top of my head I immediately think of soup, but really I don't know even know how to make a soup with it. I would want to do a broth soup if so, but I am open to other ideas and suggestions. My other current idea is to make a type of cider with it.

The best thing to do with it is pour it down the sink.

Seriously, I have no clue. If someone uses pumpkin water in a recipe and it’s good, then more power to them. The foodies on here should do a pumpkin water challenge.

Curry Coconut Pumpkin soup. Sub the water for puree and make it brothy.

I make this with sweet potato around this time of year.

Start off by sweating mirepoix and aromatics such as garlic, ginger (or galangal), lemongrass, and lime leaf.

I add a couple scoops of this after everything is cooked down. Swarnadwipa (Amazon LINK)



Then add cut up sweet potato and water. (you would skip these steps and just add your pumpkin water)

Simmer until tender. Puree, strain, add coconut cream and return to a simmer.

Adjust flavor.

Garnish with crispy fried shallots, whipped cardamom-coconut cream, cilantro leaves and a squeeze of lime.
