My FIL, from Lafourche, put me on pickled pork and that's what I've been using for white beans...... he white beans are excellent. I used his recipe and cooked 50lbs, no complaints. Had quite a few people asked how I cooked them.

I smoke a butt and chop half of it for either white or red beans

Leftover ham from the holidays. I usually make an extra ham to freeze and use throughout the year for red beans and black eye peas.

I usually grab the pre-cut packaged Manda or Chisesi's cubes from Donny Rouse's House of Groceries.

I use a smoked ham hock for flavor and smoked sausage for consumption.
