Yep. Chef Paul's cookbook got me making those too. Now I mostly do them filled with lump crabmeat and covered with a shrimp/buttercream sauce that I got from a Frank Davis recoipe. Saturday I got the eggplant pirogue at Prejeans. First time I've had that at any restaurant. It was good. Huge eggplant overflowing with a sauce with abundant crab meat and crawfish. I prefer the type of sauce that I make at home, but Prejean's version was something I'd order again. I like a lot of their menu, and it's one of the few restaurants where it takes me a while to choose since they have plenty good options. I was disappointed in their seafood platter since it only had 3 shrimp and no oysters. It had a decent amount of other stuff, but not what I'd expect for $29. Too much alligator "filler." It is a tourist restaurant, but still definitely one of my favorite seafood joints. We eat there almost every time we're in the area.

I called it tour bus Cajun.
If I don't want to eat somewhere and that makes it trash, then so-be-it.
ETA: I looked up the Jazz Fest Prejean's gumbo. This looks neither thick nor dark and completely legit in my opinion.

That's about like the frozen stuff I took home. The stuff in the restaurant was quite darker and thicker.
