Potato Salad in Gumbo?
I've had it as a side with gumbo, and it was delicious.
I don't know if I'd like it IN gumbo. There's so much going on with the two dishes that it just seems like an absurd combination.
It'd be like at Thanksgiving adding a scoop of sweet potato casserole on top of your dressing and eating them together. Is it good? Sure. I guess. But it's a ton of shite going on in one dish.

I know it's a culture thing, but I say No. I've tried it a couple times, but if you make good gumbo, or if you make good potato salad, then you are just ruining your meal.
I spend time on my gumbo and I make the best gumbo I've ever had. It's the one thing I'm 100% confident in my cooking skills about. So when I see someone dump mustard and potatoes in the gumbo...well, what's the point? Potato salad is a side dish. It isn't a part of the dish.
Last gumbo I made was a smoked duck, quail, and oyster gumbo. It was fantastic. I didn't think while eating it, "you know what this needs? a spoon of mustard, eggs, and some potatoes." Now if the gumbo isn't good, then do what you got to do to make it taste better, but it's firm NO from me.

Upvoted - Definitely put potato salad in my gumbo off to the side. I don't mix it in, I just let it sit over on the side of the bowl and grab a little with some juice every so often. When I have no potato salad made i'll use a boiled egg as a substitute. Taste nearly the same as the potato salad in the gumbo. Right or wrong that's how I like it. To each their own.

then you are just ruining your meal.
And for the record. I don't add potato salad to gumbo.

I don't like it. So you are ruining your meal...IN MY OPINION. This is an opinion thread. Feel free to disagree. I think adding a bunch of shite to a well made gumbo ruins the gumbo. Some people may prefer the taste of warmed up mayo, mustard, eggs, potatoes, and green onion in their gumbo. And those people are called communists.

I'm a fatty when it comes to gumbo
So first serving is with rice
Second serving with with potato salad instead of rice

I don't understand how tomatoes are such heresy, but dropping in an assortment of potato, mustard, mayo, pickles and/or any other common potato salad ingredients has become generally accepted.

Because potato salad isn't an ingredient. It's a pretty clear difference.
You aren't putting the potato salad in and letting it simmer and incorporate. It's just something to put in the bowl or dip in. Basically like the rice you serve it over.

Though it isn't added during the cooking process, it is certainly doing something that changes the traditional gumbo flavor and the gumbo eating experience. Imagine I put a couple slices of bread in there instead...same principle as you suggest, simply adding something to the bowl. Does your argument still hold up? I'd find that just as odd.

Never been a fan. I dont need a bunch of mayo/mustard mucking up my gumbo.

In my bowl. Feel free to not put it in your bowl.
You put tomatoes in it, the entire batch is changed, not just one bowl.

Yes because one bowl =/= the entire pot.

but your bowl=nontraditional gumbo

116 yes to 35 no from a board filled with people all over Louisiana seems to think it's traditional.
And again, the whole pot of gumbo is still gumbo. You don't have to put potato salad in it.

They never claimed it was traditional, they just claimed they were for it. I think most would probably claim it's not traditional. I personally don't believe its traditional. I think most would concur that rice is the tradition thing to be added to gumbo. I'm not really against tomatoes or potato salad, My point is simply I don't understand how so many people seem to be against tomatoes (the usual argument I hear being it's a nontraditional ingredient), yet so many agree with the addition of potato salad.

PS is most definitely traditional in some parts of La. I saw an old PBS/12 show one time interviewing some cajuns (they were speaking in french) and they made huge batches of ps with their gumbo.
Just not for me, maybe a NOLA thing.

The board who bashes everything non traditional but prefers potato salad with it doesn't think it's traditional?

Probably because they think potato salad is traditional and tomatoes aren't.

potato salad is german. could this be influence of german settlers (farmers) in south louisiana?

Northern Germany does the Mayo based. Kartoffelsalat is vinegar based with bacon and is way different. I couldn't imagine the latter with gumbo
