Post your Christmas Dinner Protein. (Pics)

I had our Christmas with the in-laws tonight. This is the turkey I smoked to go along with a cajun dressing and green bean casserole. I'll edit and add to this post tomorrow after I cook for my family. Doing a 5-rib prime rib tomorrow night for that.

Nothing wrong being 70, just pointing out that they are set in their ways by now. My wife tries to get them sort all kinds of things, but they like there "organization."

Started smoking a brisket at 10:30 Christmas Eve and went to sleep.
All looked well:
Then my smoker lost heat while I slept, the same time it was hitting the plateau:
So I wrapped it and put it in the oven around 4:15. Im hoping it'll be finished and can sit in an ice chest until 12-1:00 and not be dried out. Will post pics later

The brisket ended up being awesome. Tender and moist. I was surprised at how hot it was after sitting in an ice chest for 4-5 hours.

I cooked my first rib roast today. A smidge under 5 pounds.
Let come up to room temp as suggested here, black pepper, salt and a little montreal steak seasoning as a rub.
Placed on black iron skillet in the Primos at 325 till temp was 120...removed and rested for 20 minutes. It was the best protein I have ever cooked. I cant imagine it being better. No pics in a pic thread
