Pork Chops??

Defrosted some pork chops for dinner? Feel like something other than the standard Tonys and I dont have time to put them in italian dressing to marinate.

Whats something good to season them with?

I bought some the other day and had them cut at 1.5"

I put lemon juice, garlic, salt and pepper and liberally coated with yellow mustard and rubbed it all in and on top.

Grilled them on my egg for about 15 mins side.


Outstanding.

I love pork chops grilled with Stuff A Roast seasoning and basted with Jack Miller's cut with Pig Stand Basting sauce.

I enjoy hot smoking a pork chop till it hits about 130 then putting a thin coating of BBQ on it until it hits 145. It cooks quick, so you don't get an overpowering smoke flavor, but just enough to know it's there.

Thought I had most stuff in the pantry, I don't have any of that.

Ill have to try the lemon juice stuff from tigerlee. Seen that combo a few times.

I like BBQ but the 2 year old doesn't really dig it just yet.

Going with some good old brown gravy and rice. Just put some salt and pepper on the chops and grilling them. Would rather put them in the oven, but can wait that long.

Dust chops with garlic powder, salt, and pepper. Brown well and finish with a spritz of lemon juice and butter.

Magic.

Doesnt make a gravy though. I wish it would.

Try lime juice, brown sugar and soy sauce. Juice of 1 lime several tablespoons of brown sugar and add soy sauce until it dissolves the sugar.

I've not heard of marinating pork chops in Italian dressing.

Probably my favorite way. I only marinate for a few hours. Then a little S&P and garlic powder. Sometimes I'll sub the S&P for Tony's and Lawry's Lemon pepper (I hate all other lemon pepper).

I like to take a thick cut PC, stick a knife in the edge away from the bone till I hit the bone then make a pocket inside but only leaving the small original insertion point (similar to, but different from, butterflying them).

Stuff that pocket full of whatever else ya got on hand: mushrooms, cheese, fresh spinach....etc.. Season outsides with garlic, black pepper..... Grill as normal.

Voila, stuffed PC

How do you cook them after that? Grill?

I do pork chops once a week as part of our weekly routine. I think my favorite way is to season with S&P, garlic powder, maybe a little brown sugar and cook them in a cast iron. I usually put the cast iron in the oven with the broiler at 450 to get it hot, transfer to the stove top on high and sear 2-3 minutes per side. Then I put a pat of compound butter with green onions, chopped Morels, and garlic on top and put it under the broiler for another 5-6 minutes depending on the thickness, I'm shooting for 135F or just above. I make the butter in big batches, roll it into a cylinder shape, and freeze so I can quickly cut medallions whenever I want it.

I also recommend Alton Brown's pork chop brine with cider vinegar and powdered mustard, totally different texture and flavor.
