Pork Butt Ate thru Aluminum Foil ???

I was going to cook a pork butt yesterday and forgot about it until later in the day. So I put my seasonings on it(mustard, kosher salt, pepper, paprika) and loosely covered(not wrapped) in foil overnight. This morning the few places that touched the pork was eaten through and had foil remnants on the meat. I scraped off the foil and its on the smoker, but has anyone ever seen this before? What would have been the culprit?

I would guess the mustard. Usually vinegar and acids that do that.

Could be from the salt or from the acid.

ETA: From the web. Looks like if you wrapped it with saran wrap first you wouldn't have had the problem.

"According to the Reynold's Wrap website, "when aluminum foil comes in contact with a different metal or a food that is highly salted or acidic, small pinholes are formed in the foil. This is a harmless reaction that does not affect the safety of the food."

Reynold's says a reaction happens when aluminum foil comes in contact with salt, vinegar, highly acidic foods -- such as tomatoes -- or highly spiced foods. The foil seems to dissolve or get eaten away, but what happens is it turns into an aluminum salt. Aluminum salts, like sodium aluminum phosphate, are found in many processed foods. Most scientists do not consider aluminum toxic. The Reynold's website says: "The food can be safely eaten; however, the aluminum salt particles can be removed from the food to improve the appearance of the food."

Seen it several times due to salt and acids like already mentioned.

When I put foil over something like that now, I will put a piece of Saran wrap or even a bit of wax paper over the meat first so the foil doesn't directly touch it.

Never happened to me. Did you use heavy duty foil?

I figured it was the salt, but was surprised to see it. Lesson learned I guess.
