Pork ans Sweet Potato Stew

I was writing this up when i saw someone posting a question about Gluten free roux so I thought I'd share with yall how I made this stew the other day.


It don't matter if you make this Gluten free or not but this is the Opelousas twist on every one else's pork and turnip stew. As always lots of pictures on how I cooked it.

Looks delicious....I prefer sweet potatoes to turnips, so I know I'd enjoy it.

The trick to turnips is knowing how to peel them.


Notice how thick the peel? you have to remove the cambium layer along with the thin peeling or it will be bitter. People who do not like turnips are people who don't know how to peel them

I have peeled a turnip and gotten that bitter skin. I learned my lesson

anytime i cook a meatball, pork, or chicken stew (fricasse), use sweet potatoes rather than carrots or irish potatoes.

You from Lafayette I am from St Landry and that is sweet tater country Though I do use other things for that taste of home its sweet taters

i also put a baked peeled one in my bowl of gumbo instead of potato salad. it doesn't melt in the juice

When I moved to St James parish I was shocked to see tater salad with gumbo I tried ti and it is good but I grew up with sweet tater in mine. We were pore and had a bowl of baked sweet taters on the table all fall and winter.
