Poke, Pokeweed, Poke Sallet, many names it has.


It was good. I tested a small portion on myself tonight. If I don't die, I'll make bigger batches in the future. Supposedly the roots and berries are poisonous, and even the leaves have to be parboiled and strained and rinsed before consuming, which I did, as part of this recipe.

This is mine. Poke Salad is pretty good stuff. It is getting late in the summer for it to be safe. I would tell folks it is more of a spring green. My granny would say you don't eat it when the stalks turn purple or when it flowers or shows berries. I don't put as much egg in mine, and don't always put egg at all. A little bacon and onion is nice.

No ramps are a cross of pungent garlic and onion Poke weed is not in same family. Pokeweed is poisonous that’s why you boil first, the younger leaves and shoots are usually more desirable for eating.

Those leaves looked pretty mature. Poke is more akin to spinach than to ramps. Definitely an early spring green. Parboil it and dump the water. Than scramble with egg. Only way I've ever had it.
