I think steel retains it's heat better than the stone. You can also custom make your steel to fit your oven for maximum cooking area.

I just received a pizza steel from the Baking Steel company.

Anyone have an opinion on pizza paddles?

If you watch the video, they say steel's ability to transfer heat quickly is what makes it better than stone. The bottom of the crust gets slightly darker because more heat gets moved in the same amount of time.

For the difference I saw in the video, I'll keep my stone. It has sides that radiate heat to the top of the pizza.

Team pizza steel and I bought a cheap wooden paddle from a restaurant supply store 8-9 years ago. Use it every two weeks for pizzas. Never had a problem.

Ragusa is a home cook, he likes steels because of how he cooks. Ragusa is also a sellout, so he won't do things that could wind up hurting his brand. People extremely serious about making good pizza in a home oven use the old disable the safety mechanism of the oven cleaning mode to keep you from opening an oven at 900F when it is in self clean mode. This is optimum pizza cooking temp. Steels do too good a job here, you want a stone, the steel will destroy your crust where the stone will do it perfect. There is a reason why good pizza ovens use stones.

Steel has a place for safety nazis that are cooking at standard temps, stones work better for those that want the heat and the absolutely superb crust. Always go stone if you are cranking up the temp in a real pizza oven or outdoor setup where you can crank up the heat like you should to do pizza.

Alex the French Cooking Guy had a video on this, but it looks like he may have gotten scared of sponsor reactions and deleted the video. He has his Pizza series still up where he mentions his home oven, but the video where he uses the home oven is gone.

reason being your oven is probably not made to do the cleaning mode often to make pizzas

Yeah steel gets way too fricking hot in a 550* gas oven when you put it directly on the oven floor. Learned that the hard way lol. I make NY Style pizza all the time at home and use a pizza steel on the bottom rack and it’s great. Also really good for making pita bread.

For a peel I can’t reccomend the super peel enough. I’ve had one for a decade now and use it every single time.
