I think you must be doing something wrong.

I've done a bit of googling around recently since I'm in the market for a smoker right now. While the grease fog is definitely mentioned commonly, the few people who have issues with it seem to not be cooking at a high enough temperature. I think I've only seen like 5 people say they hate it, 2 of which are in this thread.

The review from amazing ribs linked in this very thread even lists it as a huge positive.

I've had mine for 4 years. I'm not doing anything wrong but no matter. If you get one, I'm sure you'll love it.

That thing is far superior to my PBC. And what makes it superior is that I can fit it with a heat diffuser, so the the meat fat doesn't drip into the coals. That acrid fat smoke ruins the charcoal and wood flavor. It just overwhelms it.




Conversely, I made a sorta white trash DIY barrel smoker. I built a diffuser out of a pizza pan to go over my coal basket. I can hang or stack meat in there and don't have to worry about the fat dripping on the coals.

I have both and if I use the same rubs they come out the same?

I do prefer the PBC for chicken, but I've done brisket, pork butt, etc on both and they come out the same.

The heat diffuser is exactly the solution to the PBC. Those grease drippings really kill the smoking process in it.

I rigged a half arse diffuser for my PBC and it worked but it was a hassle trying to fit it over the coal basket. There's a big bar in the way.

Well I can see where you would get a bitter "crappy" flavor from your PBC but for me, it's a funk sorta flavor. Almost chemically tasting.

Have you made any mods or anything to improve the quality of your PBC? Maybe you should try and fashion a defuser of some sort. You may get a better result.

Good luck shopping. I'm moving in a few montgs and my first purshase will be some sort of drum smoker, WSM, or a gravity fed. Cooked on offsets (good ones are too big), Kamados, and Kettles, looking for a smaller smoker since I just mainly cook for me & the wife.

I will when I decide. The Bronco looks like a great smoker, but I will probably go with the PBC or WSM for portability. Will retire soon and don’t plan on sitting on my back porch and watch the world go by.

Welp, you didn't mention shite about hauling stuff in your OP!

So it really comes down to what size PBC or WSM. And do you really even need a smoker? The Weber Jumbo Joe is one helluva a tailgate/ car camping grill for two.

If you're looking for a set and forget travel smoker, it doesn't exist. shite happens to a fire if you leave camp.
