Pet Peeve - changing recipes before trying !!!

A pet peeve I have involves recipes and people who make changes to them and then knock the original recipe. I have seen this on cooking sites where someone will give a recipe with low sodium ingredients and someone comes in and says well I used this instead of this and this instead of this and I didn't like the recipe because it was too salty. This really happens!!

For me personally this began many years ago. My go-to very easy and very good recipe has been a big hit in travels, super bowl parties, and office luncheons. When I lived in Dallas a few people at the office and I were discussing recipes and I mentioned my chicken rotel casserole. One of the ladies seemed to get excited and said she had family coming in that weekend and would love to do my casserole. Later that week I gave her the recipe so she could prepare it that weekend.

Well, Monday morning she walks up to me and announces that her family did not like my chicken rotel casserole. I really thought she was being sarcastic and said laughingly “YOUR WHOLE FAMILY?” She said that she was serious and not one member of her family liked MY recipe and she had promptly tossed the written instructions into the trash can.

So I start trying to figure out what could have happened that a whole group of people would not like it. Turns out she used tortilla chips instead of Fritos, did the chicken differently, and other things that I can’t remember. Why the heck would she drastically change a recipe she had never tried? And of course when it was screwed up I am sure I got all the credit for the crap recipe.

Now for the payback, this seldom happens in these cases. But a couple/few months later we had a luncheon at the office. I went with my go-to once again since I could make it the night before and then just warm it up that day. I live close to work so I went home and warmed it in the oven, wrapped and covered it and brought it to work.

I was younger and had forgotten about the recipe changing lady or just didn’t give a flying “F”. Well everyone tried the chicken rotel casserole and like normal were talking about how great it was and asking for the recipe. So after the event is over, this lady who butchered the recipe previously comes up to me and said she had tried mine and thought it was fantastic. She then had the gall to ask me for the recipe again.

I told her “NO PROBLEM” I would give it to her. Since it was a Friday, I told her I would bring it the next week. Here it is over 15 years later and she is still waiting on that damn recipe!!!

Okay, this is very easy and quick. I have made it easier since I first started. I used to boil chicken breast strips and shred. Now I buy the Swanson premium chunk chicken breast in a can.

Three quart casserole dish:

Ingredients:

One pound Velveeta cheese loaf, the Nice & Cheesy from Kroger works well also.

One 10 ounce can of original Rotel diced tomatoes & green chilies.

One 10 3/4 ounce can of Campbell's cream of chicken. The original kind.

One 10 3/4 ounce can of Campbell's cream of mushroom. The original kind.

One 10 - 11 ounce bag of the regular Fritos.

One can of the Swanson premium chunk chicken breast if it is the one that has the yellow banner at the top that says 28% more. If not get a large (9.75 ounce) and a small can.

Preparation:

Cut or tear Velveeta into small pieces and melt in large microwaveable bowl.

Add the rotel, cr of chicken, and cr of mushroom soups. Mix well.

Open bag of Fritos and can(s) of Swanson chicken.

Put a layer of Fritos(about a third of the bag) in the 3 quart casserole dish.

Sprinkle the chicken(about a third again) evenly over the chips and lightly cover the chips and chicken with the cheese mix(don't use a third of the cheese mix though).

Do two more layers using all of the ingredients. Thoroughly cover the top layer with remaining cheese mix(so fritos and chicken don't burn).

Bake in the oven for 15 minutes on 400 or 20
minutes on 350 until it's bubbly.

Four quart casserole dish:

Double the ingredients. It will still be three layers.

Notes:

I will usually put the cheese mixture in the microwave to make sure it is warm right before assembly. This makes it easier to spread.

You will be tempted to eat this while putting it together. DON'T - but if you do eat a few of the fritos and/or chicken. These two things are all that can make the casserole dry so using less can actually be better.

I don't care if the oven is 350 or 400 I just keep an eye on the casserole and once it starts bubbling I pull it out.

This casserole can be prepared and stored in the frig for a length of time before cooking.

For some reason I always think this is even better the next time you eat it.

Yep, have seen it there. I was looking for two recipes recently - smothered chicken & rice and beef tips.

Inevitably you always have a bunch of 5 star ratings and reviews and then some idiot who tells of the changes they made and that the recipe sucks(with their changes of course).

I don't hold a grudge. The lady involved is actually one of the nicest people I have ever met. At first I purposely didn't give her the recipe and later forgot. I don't live in Dallas anymore and am not going to track her down to give her the recipe plus she was pretty old even back then. She may not want or need it anymore.

She may be, or she could be in that big casserole cooking school in the sky.

She did ask about it a couple times after trying my version but I haven't heard from her since I moved to Houston.

If she is still around and wanted the recipe I would give it to her. The payback for me was when she asked for it the second time after telling me how her family disliked my recipe.

It's very good and promotes weight loss.

One problem with this dish is finding sides to go with it. I prefer the Le Sueur sweet peas. It's usually that or white bread.

I have seen people take tortilla chips and use the casserole as a dip. Have also seen a guy take two pieces of white bread and make a chicken casserole sandwich.
