I don't understand some people's insistence on cooking eggs in a cast iron skillet.

i dont understand people who cant cook eggs in an iron skillet without them sticking.

a. season your shite
b. slow the frick down and dont cook them on high.

c. perfect eggs and a quick wipe and hang the cast iron back up.

beat eggs, add a little salt and pepper, and bit of club soda to make them extra fluffy. Melt butter in skillet and add eggs. Cook to desired fluffiness.

I've had two chefs tell me the secret to scrambled eggs is adding sour cream. I've never done it, but one of them has a brunch spot in Chicago that is ridiculous.

I do the standard eggs, splash of milk, S&P, and just barely done, borderline runny.

Ramsey uses creme fraiche, but I subbed sour cream a few times and it was fine.

Too much white. There should be zero.

I actually prefer my eggs this way. I let them set when frying and then flip and let them set again before folding and mixing. I find the texture and the flavor better when the yolk and the white don't completely mix. To each his own.
