peppers in vinegar

I have a bunch of hot banana peppers from the garden I needed to do something with.
We made a mix with vinegar, peppers, and some sweet stuff for balance. We boiled it to kill germs and set up overnight before blending and straining.
We entertained ourselves watching the real Wonder Woman while the peppers cooled. Too lazy to straighten the pic.

FWIW, I don’t think you need to boil the peppers. The acidity in vinegar is more than enough to kill any unwanted bacteria.

No, just put a few drops of the vinegar into beans, sprinkled over cucumbers, on a sandwhich.... when the vinegar runs low add more. At least that's what I do and my grandpa did.

I did something similar a couple of days ago. I boiled the bottles, then placed split peppers, sliced onions, and whole peppercorns in the bottles. I then boiled salted vinegar and poured in and then sealed. Then I rested the bottles in the boiling water for about 15 minutes and allowed to cool to room temp in the boiling water overnight.
It came out great! I will stuff more peppers onions and peppercorns in the bottles next time.

You really don't need to boil them. All you're doing by boiling them is making them mushy from the start. No bacteria will grow in there with the vinegar and salt.
I've been making pepper vinegar for ages and all I do is cut up the peppers if they are larger ones like habanero or Butch T's, put them in a shaker bottle, add vinegar and salt and let it sit. The vinegar gets pepper hot in no time. I grow enough peppers that when the bottle runs out, I simply start over again with fresh ingredients.
