We tried it last night with chicken and bread. Wow, it was incredible. I used 4 habaneros and 5 large jalepenos. It brought the heat in a good way. Thanks

If I'm making any jelly, I hold onto any lemons that I've zested and or juicec. Right, just the pith. That's where the pecten is, and you can boil that as an assist to Certo. Or to thicken.

You need to make home meade marmalade, and see the power of lemon rinds. No store bought pecten nneded. Who'd a thunk?

I love Pepperland Farms pepper jelly. The pineapple habanero, blackberry chipotle, and raspberry chipotle are my favorites. Friends love the mango habanero. Ocassionally, I luck up and get a jar of satsuma pepper jelly.

I've always wanted to try this but I keep reading about the botchalism risk and it makes me too scared to try.

Just use proper canning techniques. Ball has some great tutorials for canning anything that can be canned.

Most anything with a vinegar based brine or heavy on tomatoes can simply be put in a hot water bath, but things like canning vegetables in lightly salted water, soups, stews, etc. absolutely need to be pressure canned.
