That Tyson chicken stinks so bad. My stepson will eat it by I could not get past the smell to even try it.

Dude you were so excited when you learned how to grill corn this week. I wouldn't be critiquing what anyone else is doing.

- A bunch of processed, salty, nasty chicken
- Spinach tortilla is no healthier than any other regular tortilla.
-Pico and guac, ok.. I wouldn't make those fresh, either, too much work for an everyday thing
-Butter is unnecessary.
-low fat sour cream is disgusting
-that's a lot of cheese
You could easily make that way tastier and less calories if you swap out the Tyson chicken by pre-cooking a boatload of chicken one day and spreading its usage out, use the low-carb and high fiber tortillas, nix the butter and sour cream, and reduce the cheese to maybe 1/8th cup. Use the butter and extra cheese to make some quick and easy cheesy broccoli. I would add salsa to the burrito.
While I appreciate the effort, that is neither very healthy nor very low cal. It is, however, very easy and convenient.
It's possible that this is genius troll, however.

Maybe it's all my time spent around real Mexican food but that looks pretty awful

Thanks for showing us, but I'll throw this in here.
In my experience "diets" don't work. Never will. Sure you'll lose some weight. But then you'll gain it back or gain more. Then start the cycle over. Why? Because you aren't correctly paying attention to what you eat and you are probably placing restrictions on certain foods. And by paying attention to what you eat I don't mean "eating clean" or gluten free, or organic, or any of those shenanigans.
Learn to count your macro and micro nutrient intake. That's it. No restrictions. No "diet". Food is fuel for the body.
Sure, this is quick. And cool, it's about 500 cals. But is it an adequate source of protein, carbs, and fats? Fiber???
I'll second a few things Hulk said:
Learn what your body needs calorically to maintain. Break those calories down into protein, fat, and carbs. .75-1 gram of protein per lb of body weight. Then fats and carbs can be played with. If you prefer a high fat low carb diet, fine. Opposite? Then do that. Fiber should be 15ish grams per 1000 calories per day. I always aim for at least 25 on low carb days and 35 on higher.
Finally, lift weights. I don't care how big you are, everyone can lift 5 lbs. So start there and progress.
It's science. A magic pill won't work, there is no secret diet, restrictions cause binging, and there is no such thing as a 30 minute fat blasting workout.
Eat in a slight deficit to lose weight, eat in a surplus to gain weight.
