I didn't double the filling. But I did use 8oz of cream cheese because I didn't want to chunk the other 4oz in the trash. I added another 1/4 cup of confectioner's sugar to compensate for the extra cream cheese.

I will add some dissolved gelatin to the mix next time to firm it up a bit, and to stabilize the whipped cream.

It's damned tasty....

I followed the Pioneer Woman recipe and topped with chopped Reese's Peanut Butter Cups. Damn tasty and super easy.

Wife makes this pretty often using Emeril's recipe. So good.
