Paul Prudhomme - Beef Gumbo

I ran across this fella cooking Paul Prudhomme's beef gumbo. It looks amazing. I think I would stew the beef down more to tenderize and either cut the amount of okra in half or cook it all down.

I watched it the other night and he certainly needs to keep his beef in longer.

The amount of okra is also very very excessive.

Looks good, but without a roux, that's no gumbo.

Wrong. It might not be a gumbo you like but it's still gumbo.

I can't stand Louisiana absolutists.

Is there a Cajun gumbo and a creole gumbo? Is gumbo not a stew that is comprised of a stock, meat, the trinity, and thickener? Be that thickener flour, file, okra, or a combination of any?

Additionally, Paul Prudhomme is synonymous with Cajun and Creole cooking. If there's an authority on Louisiana cooking, it's him and I'm more inclined to trust his judgement.

I believe using the okra as a thickener is essentially what makes it a gumbo. It really doesn't matter what type of meat is used.

Additionally, if Paul Prudhomme says it's a gumbo, I'm gonna call it a gumbo.
