Last night's dinner. Sides: twice-baked Russet potato and sauteed asparagus.

Season with kosher salt and freshly ground black pepper (don't be shy with the pepper). Seared in a cast iron with olive oil for about 2 minutes per side. Threw a couple knobs of butter in the pan with 2 whole garlic cloves, a sprig of fresh thyme, and a sprig of fresh rosemary. Baste in the molten butter and let rest for 10 minutes before slicing.

The butcher by the house frequently has waygu coulettes. Not exactly where it's from on the cow, but they are excellent steaks.

Good god that looks perfect.
I think sirloin gets a bad rap. I love a strip and a ribeye but prime sirloin is half the price and packs a lot of flavor.

I picked up two of those at Sam's. Prime not Wagyu, did a reverse sear, one of the best steaks I've ever eaten!!
