So this is the third year with this fig tree and its finally producing fruit. How much longer before we start pulling and before the birds get them?

Don’t pick until they are turning purple and threatening to fall off. You’ll likely have to share with the birds unless you can get a net over the tree.

Ours turn a brownish purple when they’re ripe. Don’t pick when they’re green. Have never had an issue with birds or squirrels. Our tree probably produces 100-150 figs a season.

Figs won’t ripen off the tree. An old Cajun trick is to tie shiny aluminum disposable pie tins to the tree branches; when the wind blows, the pans flutter, scaring off the birds. NB, the bold arse mocking birds in my yard aren’t scared by cats, raccoons, the garbage truck, or me more than 24” away, so I dunno if the pie pan trick has been learned and widely disseminated among the mockingbird brethren.

I planted a fig 5 years ago, to date I have eaten exactly 6 ripe figs from it. It’s pretty much just a big natural bird feeder.

If you do get figs, try making a fig upside down cake. Exactly like pineapple, but substitute quartered figs for the pineapple.

My neighbor's cats hang out in my yard a lot, but that doesn't stop the birds from pecking away at my figs. If I'm lucky, I can get some from the lower branches, but the day they ripen, the birds are on the job.

Unfortunately, my tree seems to dying all of a sudden. There's one limb which went completely dead. The leaves are yellowing and falling off on one side of the tree. The other side looks okay. It's a strange tree. Half of it was lost during Gustav, but some new growths appeared and it's been filling out more and more.
