oyster and pasta dish. I'm calling it oysters casino.

2 pints oysters, drained, reserve one cup liquor
2 large shallots diced
8 cloves garlic chopped
1 bunch green onions, chopped, whites and greens divided
1 bunch parsley chopped
1 lemon, zested and juiced
20 grape tomatoes halved
1/2 tin anchovies, chopped fine
4 slices bacon, cut into 1/4" pieces
1 cup white wine
1 cup cream
1 cup parmesan cheese
1lb cooked pasta (linguine or spaghetti)
drain oysters well and reserve liquid
pick out 5 or 6 of the biggest oysters and chop finely
render fat from the bacon in a large heavy bottom pot
remove bacon and set aside
add shallots, garlic, green onion whites, lemon zest, and half the parsley
sweat this down in the bacon fat, but don’t brown
add the chopped oysters and anchovies and brown
deglaze with white wine
add oyster liquor and lemon juice
simmer and reduce sauce by half
add tomatoes and add back the bacon
add cream and reduce further
season with salt, black/red pepper to taste (really should not need much salt because oysters, anchovies and bacon should have plenty)
add remaining parsley and green onion tops
add remaining whole oysters about 3 minutes before hot pasta will be ready
add parmesan cheese
add hot pasta to the pot and mix well to incorporate
serve with crusty bread and salad
