I have never tried dry mustard, just yellow mustard. I will combo this recipe with the WFDT recipe.

Try it we have people leaving grilled steaks and asking for more beans.

Smoked ham, smoked jalapenos, mrs butterworth, the trinity, yelow mustard, Bush's regular beans.

Smoke on the pit uncovered-smoked with pecan wood...

Bam slap your momma good..

Tony’s is Tony Chachere’s...a cajun seasoned salt. You can sub any salt based cajunor creole seasoning.

Norris Best is a locally made dark corn syrup. Sub any good, dark syrup.

Shut up HeadSmash!

Hey Paul, that’s because we were cotton pickin’ school kids, all dirt poor and raised by sharecroppers. We had to learn how to make good beans, cause they were cheap and plentiful.

One time when my dad got a raise, we got to go all the way to Brown's Landing and eat all the catfish we could handle.
Of course we had to stop in Mangham on the way back home visit my great grandparents.
They were super rich, not only did they have butterscotch candy, pe-paw had Werther's!!!

We used to load up on crawfish out off highway 15, and then we'd cook them, but didn't tell anyone what we ate for dinner, because it was embarassing!!!

And it was a very big deal if we got to go to Piccadilly after church... like a couple of times a year.

You all should read Rick Bragg’s The Best Cook in the World. Old country cooking with a great story for every recipe. He’s from Northeast Alabama so it’s low Appalachia food but similar to what you are talking about. I know y’all would enjoy it.

Y’all know that guy that has the big N for Neville on the side of his car?

I used to love when that road was flooded and crawfish were walking across by the zillion kazillion!
Literally truckloads, coolers, grocery sacks, whatever we could fill up.

Much faster that my chicken neck nets!

Oh yeah... I remember one time, we were just tossing them into the bed of my brother's red pick up. My parents had really taken a step up in the world, and we'd moved to a house out in Lakeshore. But living "in town" called for certain sacrifices, so we ate crawfish very hush-hush because we couldn't afford shrimp! Lol!
