It’s about using a quality vermouth that hasn’t gone rancid. Cheap vermouth, or one that’s been open for a while and not stored properly in the fridge, will ruin it.

TIL Vermouth goes bad.

Shelf-Life Guidelines

Unopened: An unopened bottle of vermouth stored in a cool, dark place can last 3 to 4 years

Opened (Refrigerated): Always store opened vermouth in the fridge. An opened bottle stored at cold temperatures will remain high-quality for 1 to 3 months, and typically stays drinkable for up to a year, though it will slowly lose its vibrancy.

Opened (Left on the Shelf): If left out at room temperature, it will oxidize quickly and will often develop an off, sour, or flat taste in just a few weeks.

Should probably toss out that bottle that's been sitting in my liquor cabinet for 20 years then. No wonder mine always came out tasting like shite. I always hated it because of the vermouth. I'll have to give the Manhattan another try - but at a bar.

The trick is to buy the half sized bottles, 375 ML and put it in your fridge once opened. It’ll last a few months that way, but that still might not be enough time to get through it depending on how often you use it.

For a Manhattan, I prefer Italian sweet vermouths such as Carpano Antica Formula or Cocchi di Torino

I will give a Manhattan another try, but at a bar that makes uses Vermouth enough to know that it should be refrigerated and is used enough not to go sour.

Today, I would go OF, Sazerac, any other bourbon based cocktail, then Manhattan

I prefer an OF. If you really want a different experience, try an Egg White Old Fashioned. Incredibly good
