Offset Smoker (stick burner) Recommendations?

I'm looking to buy a heavy gauge offset smoker for the back yard. I'd like enough space to at least be able to do a couple of briskets or more, but nothing huge. Am looking to spend $1-2k and am primarily hoping to find something in central TX where there seems to be quite a few manufacturers. Does anyone have any recommendations?

Start your search with the old country smoker. Sturdy and very minimal mods needed to get it going good.

Correct. I chose that one bc it was priced well for someone just starting out on an offset smoker, it’s steel gauge is thicker and sturdier than the rinky dink Oklahoma joe…. and what pushed me over the top in choosing the OC was Aaron Franklin himself used it to make all of his YouTube bbq video series.

Thanks. Looking at the brazos model which is 1/4" thick and runs about $1,200. Seems like a good value.

Texas Original has always looked decent to me but I have had no experience with them. For superior quality, but a higher price, check out Lonestar Grillz, Klose, Pitts and spits.

That’s the one. You’ll like it a lot if you’re dedicated to learning how to use an offset. Getting blue smoke off of a well made fire is the hard part.

I ruined some meat with white smoke a few times. You also want to try your best to not get a lot of white smoke when you’re seasoning it before any meat is thrown on.

So building a good fire out of the gate is pretty important.

I bought some felt tape and lined the opening lip on the hood and it doesn’t leak smoke at all.

I have a holland grill (that is also a smoker), a pellet fed smoker and the old country. The OC is my favorite to use bc an offset is just... more fun. and the brisket and chicken taste the best off of it of the 3 I use.

Thanks. I'm not new to offset smoking. I've just been using a cheap arse char grill brand I bought second-hand for years, and it is about rusted out. Just looking to upgrade.

I saw a video on youtube of somebody lining their Old Country Brazos with felt tape like you did...seems like a good idea.

It’s a good smoker.

Klose and companies alike make outstanding smokers and I was leaning on a smaller company like them to buy mine. But once I went to academy and put my hands on the old country and could see how well built they are, I bought.

2 years later I’m still happy.

Old Country Brazos is a solid smoker. Don't let the wheels fool ya though. You won't be moving it around a whole lot. Oh yeh, make sure you have a trailer and a strong friend to go with you to get it.

Unless you get an Old Country you budget is too low. Look at Workhorse Pits, Mill Scale, Fatstack Smokers, or Franklin. If you are interested in reverse flow you have Lang or Shirley.

Even though I haven't gotten my hands on it, from seeing their shop and their smokers the new Austin Smokeworks backyard pit should turn into the leader of the backyard market. Need to up the budget though. You aren't going to get anything from any of the Central Texas builders for $2k, especially not with brisket prices.

I always tell people go bigger on a backyard smoker, much easier to maintain the fire and will make for a more enjoyable cook. 120-150 gallon would be my smallest, skip the 20" chamber models a lot of places will sell. Now if you want to get a 250 gallon smoker on a trailer I might know a guy

I got a Lone Star Grill a couple years ago and I love it. They just rolled out a pellet grill that is getting great reviews too. I went with the 20x42 offset and have done 2 briskets at a time, but easily have room for more.

The smokers are very well made and the griddle/grill over the firebox is a nice addition. Works great for searing steaks after doing a reverse sear in the main chamber.

I bought a Lang out of Georgia. Absolutely love it. The small ones may be in your range.

I have been cooking both a Klose and Gator pit for years with great results but I think your budget is too low for these two unless you get a small one.
