Im not a huge fan of Orval. Too dry for my tastes I think.
I've never made a hard Cider, and this is a bit off topic, but a bar I was at had their own hot cider the other night. 1 gallon of cider, 1 liter of Powers, and 3 cinnamon sticks. Let it go for a little while over low heat, and damn its amazing. Think I'm gonna make some up this weekend.

Anyone ever brewed a strong cider that they were pleased with?
Yeah, years ago.
From what I remember it was basically 5 gallons of cider, brown sugar, and champagne yeast.

I've only had one bruery beer but it changed my opinion on saison's for the better. Where the hell do you live to get that? And the abyss. I'm guessing it's last years? I thought it doesn't come out till mid november.

I'm a big fan of cantillion's gueze. never had the bio one but I assume it's very similar (supposed to be organic or something). I finished a bottle off by myself during zwanze day.

Just giving you a hard time. It doesn't take much to beat BR's beer scene, and at the same time it ain't that bad compared to everyother town in LA (minus no) or Mississippi.

I have a cider fermenting away at the moment. It's my first one so not sure how's it going to turn out.
Bought 5 of 1 gallon jugs of pure apple juice at Fresh Market (a dollar cheaper than whole foods at the time). Threw them all into a carboy with some brown sugar and I decided to go with S-04 for the yeast after doing some research on homebrewtalk.com. Haven't decided if I want to keep it still or carb it yet, which can make things complicated.
ETA: Brewed the AHS Kalamazoo IPA on Sunday. It's supposed to be a Bell's Two-Hearted clone.

Yeah, that's where it got complicated. Seems like it would just keep on going in bottles and blow up or get bad. I had some killer spiked cider over the weekend and it urged me to look into this again.

I'll probably use the stove top pasteurization trick to prevent any bottle bombs. Once it's done fermenting I will backsweeten it if it's too dry, then bottle and prime it. Then once it reaches a good carbonation level, stick the bottles in a big pot filled with 190 degree water for about 10 minutes. Hopefully I won't have any explosions.

alright, I should have the house to myself for a few hours early sat evening. We can get together a few people at my place for a small tasting and go out to watch the game.
Might be the only game we can watch at the cove this year since they don't open early enough to watch the day games.

I also had my first pumpkinator last night and I thought it was outstanding. I think it's by far the best pumpkin beer I've ever had.

Had to bump this...
I got The Bruery stuff when I went to visit a friend in Atlanta. That place has a damn fine selection!
The Abyss I picked up last December at Specs in Houston. I bought the last 6 bottles they had on the shelf.

Its a great fall beer. They are addictive though. All of a sudden you've drank 12 of them, and any ideas of going to the bar are dashed.

Dont think Ive ever had that one, but Ive never had an Ayinger that wasnt great.
