Not all skirt steaks are the same...

The difference between the inner skirts and the outer skirt is night and day... The outer is MUCH more tender.
I served skirt steak to a neighbor and he was amazed. He said his always comes out tough. Just thought I would share this little nugget, because sometimes even the guy behind the meat counter doesn't know the difference.

How do you know whether you got the inner or outer? Asking for myself.

the outer skirt is more jagged and thin. It looks like torn paper

Good info!
AKA Flap Steak, Sirloin Flap and my personal favorite, Flap Meat. It eats well when cut into cross sections, marinated, and grilled MR.

I agree. flap steak is great. We get it at Fresh Market in Lafayette. Pricey but worth it.

Occasionally they have some very marbled sirloin flap, great for steak tacos.
