NEXT FOOD CHALLENGE: November 7th - LOW CARB

I originally thought November 13th to be somewhere in between Halloween and Christmas. I have decided to go with November 7th because someone has mentioned that we should do a Christmas challenge and I thought we need a little more time between challenges. We can do a Christmas Challenge in early/mid December and still have time to relax during the holidays.

So the challenge is Low Carb.

It can be a naturally low carb dish, like steak, or it can be a dish that is normally full of carbs that is modified to be low carb (like zuchini noodles instead of regular pasta).

I do not want to see anybody splitting hairs over what qualifies as low carb. Some low carb dishes have high carb ingredients in them (in moderation). Nobody will be counting the carbs. If you feel a dish is not low carb, then don't vote for it.

This should be a good challenge, because people could submit appetizers, soups, desserts, entrees, side dishes, etc, with a wide variety of ingredients.

I'm in! I need to get a deer down for some fresh backstrap, but I have a backup plan if not. See you then. Congrats on the win, I need to find a way to have your carnitas tacos mailed to me.

I think if you are going to do this then It should be something that generally has a lot of carbs but the substitute makes it low carb. Like you said it’s basically just anything goes then just leave the rice/pasta out. Lol.

I love cauliflower. It's versatile. A head of fresh cauliflower in the grocery store is always available at a good price.

Cauliflower is great for low carb items...cauliflower pizza crust, cauliflower potato salad, cauliflower rice, cauliflower soup and more.

A YouTube search for "cauliflower low carb recipes" provides many many good options.

The whole point is to give people low carb ideas. If you just take a steak and put it on a plate, then you won't win. I think you have to have some creativity.

Darla has posted some low carb suggestions on this board, and I recently posted the spicy green cilantro-lime sauce as low carb suggestions. The green sauce is naturally low carb - I didn't have to substitute any ingredients, but several people tried it after I posted it.

If you've done low carb for any period of time, you know you start looking for new ideas.

I personally know that creating low carb pasta or baked goods is very hard, so I will probably give more credit for a recipe that is creative and allows me to enjoy a food that I haven't been able to eat because of carbs.
