Howdy - I'd like some guidance on a new set of quality cookware. I'd like something really nice but not venturing up into the truly high-end.
All-Clad
Somebody recommended those copper core all-clads. Looking for more info/recs. TIA!

I don’t think sets are the best way unless you are the type of person that needs thing to match.
I like enameled cast iron for stock pots/Dutch ovens.
Pasta pot can be cheap even cooking isn’t important when boiling water.
I like carbon steel for my skillet.
Stainless steel with thick bottoms for sauce and sauté pans.
If you do want matching sets Deyemere is another high end brand similar to all clad.

I've never purchased a set of pots and pans like this. I've always bought the sizes and types that suit my cooking habits. For example, I use cast iron frequently, so I have various sizes of those.
Before you buy, think about what you like to cook and what pots or pans in size and type would be most suitable for your cooking.

I Agree with other posters re: set purchase. These all clads are great for one or two piece purchase. Then pick up other pieces to fit your needs.

If I wanted to just buy a few saucepans, are those all-clad copper core ones good?

If what you want are the best sauce pans for a reasonable price, pick up some Falk copper.

The all-clad copper core pans have a very tiny amount of copper in them.
If you want stainless and dishwasher safe, pick up some Demeyere. Objectively better than all-clad.

I agree with everyone as well. I bought a set of All-Clad and have a bit of buyer's remorse because I don't use them as much as I thought I would.
Piece by piece is the way to go for sure. A large cast iron skillet, an enameled cast iron 6 quart pot with lid, a good 12" non-stick skillet, a non-stick skillet with high sides with lid, a large stainless steel chef's pan with high sides, one small and large good sauce pan.
I may be forgetting something but these are the only pots and pans i would really need.
This is the best non-stick skillet I have ever owned

What is your opinion of Calphalon for this need?
