My wife just showed up with about a pound of crawfish. We are in Germany and don't have the selection of boil spices you guys have. How can I "fake" what I need to put in the boil? I have cajun spices here that I brought back from home, but no boil spices. Suggestions would be welcome and thanks in advance.

Can you get salt, cayenne pepper and lemons? I’ve done plenty boils with just that and they come out fine.

Ha ha, if you knew what they cost here... I didn't buy them, I just have to cook them. If I used them for bait I would end up paying a couple thousand dollars fine for illegal fishing.

That's what I was looking for. Yes, we have cayenne, salt and lemons. I'll go with that. Was just looking for a basic boil mixture. Thank you!

Why would you bother boiling one pound of crawfish?

Thats like frying 2 chicken nuggets

Just looked at the package, it's a kilo of whole crawfish.

I understand, but we are where we are, and it's not very affordable to do that like you do. We're only two people, and by the time I add the other ingredients, I think we'll be full. Believe me, I would rather do the whole spread for friends and all, but it's 20 outside with snow, so we're kind of limited in our options. It's more of a "taste of home" thing for us.

I suggest including onions and garlic in your boil.

If you have access to the dry seasonings in the Zatarain's boil bags, you could make a pouch of those for your boil. Here's a picture of the ingredients.

Thanks, I think I have most of that already here. I'll mix the seasoning and see how it works. Appreciate the pic.

Are you sure they aren't already cooked? I've seen them shipped frozen, but they've been cooked in seasoning and you just steam them.

I just looked again. They're quick frozen and cooked, from Spain. I guess that changes everything. It's not a huge deal, just wanted advice from the experts. I'll be at my sister's in South Carolina later in the year and we can do this right.

I don't think we cook anything here without onions and garlic!

Yep, whole and frozen crawfish are usually already cooked.

Also, expect the crawfish to speak Chinese. (ETA: I just saw your comment that they're Spanish)

We definitely avoid anything from China or Vietnam. Strangely, crawfish are exploding in Berlin, but people don't know what they are (or how good they taste).

If you don't smell spices, you could season water as suggested and boil it for a bit to get the spices into the water. Then cut the heat and add the frozen crawfish to thaw and soak a while. I have no idea on timing, though, to avoid overcooking.
