I like Italian sausage, but FWIW, I usually use breakfast sausage + ground beef in my red pasta sauces because my kids don't like the anise seeds found in Italian sausage. (One found one in a dish once and said it tasted nasty and looked like some kind of bug, which made the others push their plates back too. ) I even use breakfast sausage on homemade pizza for the same reason.

interesting. i don't 'find italian sausage really "minty" per se, but it definitely has some herbal flavor. I could see someone not liking that.

its the fennel seed, too much of it can be one of those "acquired taste" deals, I always get mild Italian and add more garlic and black pepper.

Thanks for the well-thought out and informative post. Bringing your OT schtick over here really elevates the board. Be sure and send link an IM and tell him to come over here and troll me as well.

Any time I know I'm going to fire up the grill I pick up a link of sweet italian and a link of hot italian from Fresh Market. that's some great stuff.

Actually looks pretty decent.

...needed a nice Sangiovese to go with it though.

Ah, it might be fennel and not anise seeds in my Italian sausage. I googled and found that different types use one or the other. My unsophisticated palate can't tell the difference.

Can we argue about that now?

Go bite an anise seed in half with your inscissors. See what you taste.

After looking at the gumbo thread I'd suggest not calling everyone out on what they do wrong based on assumptions and concentrate on your own homework.

My mom used to put them in green beans (anise, not fennel). I think I do prefer the fennel seed flavor.

for real. apparently if you don't eat fast food and you prefer to use fresh vegetables and meat rather than things that are frozen or out of a can/box then you're an uppity pretentious douche.

Have you ever tasted any of the dishes that you've criticized on this board? Surely tasting it isn't a requirement before criticizing it.

Fair point. But I try to be slightly more tactful and helpful/inquisitive in my posts. Probably doesn't always come across as such, and every once in a while I can be harsh .. but I wouldn't say that's my m.o. Maybe I should just start posting things like:

really?! FAIL

apparently that's what garners respect around here. that and eating McDonald's and drinking Bud Light.
