How do you operate a business with a lease that allows for less than 60 days of operation?

Local tv news is saying the restaurant got a reprieve and will stay open at its current location.

Yeah, reading between the lines it seems that the new owners were upfront about not renewing the lease months ago when they bought the building. Mona Lisa framed it a little differently.
