The dish with the shavings...is that his foie gras course? I know for a while he was freezing the foie and shaving it, curious how that worked in practice?

It's really fantastic. Foie was frozen and shaved when I went. Take out a block of frozen foie and shave it onto the plate in front of you. It is fluffy and melts in your mouth. They did a peanut brittle and Riesling gilee with it too.

$195 a head plus $175 for the beverage pairing.

Does that include tax and tip?

Thanks for posting. Looks like an incredible meal.

No it does not. Chang's new restaurant nishi actually includes tip in the price but I have seen some reviews saying the prices are a bit exorbitant for what you get as far as ambiance (apparently is extremely casual but ~$70 a person).

My boy from Regalis foods supplies all their truffles and a lot of other products as well. Love seeing pictures of him on Instagram hanging out with Chang.

He texted me a few years back and was like, "I'm having Thanksgiving dinner at Per Se."

Chang is interesting because he doesn't discriminate between high brow and low brow. He'll throw out an inclusive price of $200 then also throw down some cheap arse pork buns (by NYC standards) and PBR at Ma Peche for happy hour.

Hell, his new chicken sandwich joint is like a freaking chik-fil-a and has stands in MSG during NBA games.

I'll confess, I'm as happy walking out of Ma Peche after throwing down with some bar food and grabbing a few desserts from milk bar as I am leaving Ssam bar or Ko.

And my wallet is MUCH happier.

That's awesome, it would be really cool to be intertwined with nyc food culture.

I agree, I probably won't go to ko for awhile but I'll definitely be hitting up ma peche and especially milk bar more often.
