Miso Glazed Eggplant - Japanese philosophy in a single dish (pics)

I took a trip there recently and I think this dish epitomizes their culture. A single simple ingredient done very well. Very feng shui or yin yang or whatever.

Start with eggplant which I just cut from my garden (first one of the season).


Cut, salt x 30 min, blot dry


Roast cut side down in sesame oil, flip, brush miso glaze and broil.



Miso glaze is sake, rice vinegar, white miso, sugar

That looks awesome. Great job. Miso is such an awesome ingredient.

Tsunami does this dish on their appetizer menu. Highly recommend to anyone who hasn’t had it. Underrated.

Glaze is 1 Tbls sake, 1 Tbls mirin, 2 Tbls miso, 1 Tbls sugar, 1 tsp sesame oil.

This is my new favorite eggplant recipe. Very simple and delicious.

Looks like an Ichiban eggplant. I've grown them in the past and they are a favorite for grilling since you can just halve them and go at it.
