I'm going to try making this but putt all the meat on a rotisserie spit like shawarma, then slice it off and make a burrito with it. Will come back with pics after I've done it.

I tried to marinate some wings last night using the pickled jalapenos, and I wasn't a fan.
I usually grill the wings, naked with kosher salt. Marinated them for about 5 hrs, salted, and grilled. Maybe I should have dried them better after the marinade, but made the skin rubbery and not crispy.

I did the same and grilled on grass grill. But, I dried mine completely and lightly coated in some baking powder. Wings were crispy and full of flavor.

Bumping an old post- So, tried this on a canoeing/camping trip and it was a success. Doing it again for the beach trip.
I grilled the thighs, cool them, vacuum seal them in bags, and throw in cooler. Dinner at destination, boil a big pot of water and drop in the bags for a couple of minutes and boom, you're eating tasty sandwiches with minimal prep at destination.
Super easy after getting the tents set up, or super easy rolling in from all day at the beach.

I’m actually doing these tonight. I think I’m going to skip the butter baste and just make a hot sauce mayo to go on the sandwich
