Melty Grilled Cheese on Homemade Bread

Whole milk American cheese on the right, and American with Feta on the left.


Made on Ken Forkish's White Bread with Poolish.

Tip: Use mayonnaise instead of butter to get a better golden sear, flavor, and easier spread.

I don't like this tip. I love mayonnaise but the flavor when done on grilled cheese is off to me.

Better tip: Melt some butter and spread it on the slices of bread, then dust with Parmesan cheese.

I like mayo on my grilled cheese, but I like it on the inside between the cheese and the bread, still use melted butter for the outside

Why'd you ruin good homemade bread with American cheese? To each his own, but I'd have buttered both sides (ick to the mayo), toasted one side, flipped the bread & put a smear of good chutney and sharp english cheddar on the now-toasted insides, smushed it together, and toasted the outsides. (I like both the sides toasted.)

Or whole milk mozz with a slice of tomato tucked inside...

I have never been able to duplicate my Mother's grilled cheese sandwich. Perfect balance of butter, sharp cheddar and thick sliced creole tomato. Perfectly browned and crisp.

My wife wanted it. So thats that we had.

RE: grilled cheese, I usually just make open faced cheese toast w/good bread. A spread of something sharp and a little sweet, like English brown sauce, chutney, or Pickapeppa sauce, goes great under a layer of your favorite cheese. I could probably live on cheese toast, as long as the bread was homemade.

I’m a fan of mayo for grilled cheeses but you have to go very lightly or else it does change the flavor

The store where I shop makes a rosemary olive oil sourdough bread --it makes the best grilled cheese sandwiches I've ever had! I use Land o Lakes American cheese and some shredded monterey jack cheese in addition to the slices. I tried the mayo trick a few years ago and did not like it---I love my butter!!

I saw a video yesterday where someone threw two big handfuls of cheese down on a flattop while there were two pieces of bread toasting. While the cheese and bread were doing their thing, he threw some lobster on the flat top in a pool of butter and let that sear. Then, back to the cheese, the bottom of which had turned into a light brown crunchy deliciousness and the top turned into goo. A slice of bread went on each gooey cheese glob, which was then squared up and pushed into the bread with the spatula. Then the bread flipped to toast on the other side while the cook went to town on the lobster and chopped it all up. Then the lobster went on the crunchy cheese and the sandwich went together.

I had a little chub.

Pretty good just with toasted cheddar under the broiler, too.
