It's 0% actually. Been getting mine from Pimanyolis for a while now whenever I'm in town. They're made fresh every day from Wed to Sat from what I can tell.

I've always heard that they were a PITA to make. Not true?

If you leave out the boiling of the meat and steam/cook time total prep for 6 dozen is well under an hour depending on my labor force which is grandchildren or nieces and nephews at this point.

Although I doubt it you could be correct for that vendor but it is certainly not the rule. Most places make a huge batch and freeze them and simply defrost and cook/reheat as needed.

Thanks RT. No private messaging here, but let me know what you think of the tamales. I'd love to see a photo of them if you can post one here. I should be able to contact them on the Facebook page through messaging and they have a cell number to call on there if I remember correctly. Thanks so much for following up on this.

I have had them, and they are good. She said she makes them in the style of the old Manuel’s tamales but uses corn husks. I have done in my freezer now. Good stuff!

They are good, served them this evening with my chili and the consensus was positive from folks at got the regular not I the hot. I am really picky on my tamales and have never had any better than the ones I used to get from guy in Natchitoches but these are the best I have had made locally so if you are inclined give them a try. I will get more later.
