Meat grinder breakfast sausage

Just got a meat grinder and looking for a good sausage recipe. Gonna start out with just sausage patties and try putting into casings after I figure out what I am doing. Alton Brown looks like a good one. Any others? Thank you.

What ever you do, don’t buy Cabala’s “Breakfast sausage” seasoning pack. It’s garbage along with the rest of their seasoning packs for homemade sausage.

Go to a site called thespicysausage.com for a few dozen recipes for making your own sausage.

I've tried a few and did a bit of tweaking to them to suit my needs, but right off the bat they are not bad. You'll have to stock up on different seasonings, but that can be a good thing as far as I'm concerned.

When I was a kid we used to go to slaughter hogs every January and make our own sausage. We use a recipe that's very similar to Fassets but add red pepper flakes and white pepper in addition to black pepper.
