After all said and done, they didn’t come out well. I’m guessing my casing stuffer is not good for boudin. It all turned to mush. There is no recognizable rice in the casings. I should have stopped at the picture of just the stuffing and made boudin balls. I’m guessing the auger messed it up.

That was some beautiful (and very tasty) boudin stuffing before casing it

The Kitchen Aid meat grinder works great. The sausage stuffer works okay, but not for boudin. The auger breaks down the rice kernels. You need a press style sausage stuffer for boudin. It can be mechanical or hydraulically operated.

I don't have a good sausage stuffer and just use my LEM grinder. It works fine for sausage but I have a little trouble getting my consistency right on the boudin. The last run I used the largest dye I had and it came out better. Still need to get a new stuffer....

We made good ole fashoned boudin for years but sadly some of my friends have passed and others aint as spry and we havent done it in a while thanks for the inspiration guess me and da wife will hafta go small batch.

I used the press to stuff these. I think the next batch will be a little easier not that I’ve worked the kinks out. At any rate, these came out great. A lot better than anything I’ve bought at the store, not including the stuff in Lafayette.
