Been doing a family pizza night the first Friday of the month. Tonight was breakfast pizza and it came out awesome. Made a sauce of sour cream, mayo, Franks, garlic powder and cilantro and used that as the base. Topped it with homemade candied bacon, breakfast sausage, and three eggs. Forgot to put the green onions on but it was still on point.

IWEI but doesnt really look like a breakfast pizza per se

Just a regular pizza with some eggs on it.

The sauce sounds extremely odd but the final product looks good. I’d certainly eat a slice.

The sauce was like a breakfast burrito sauce. Little tangy with a small kick to compliment the eggs, sausage, and bacon.

It sounds gross but it is essentially taco sauce without the chili powder. My wife, who hates food, was dipping her pizza in the sauce.

Why does your wife hate food? That's so sad!

When we moved, a neighbor asked where we were from. I said Louisiana and he asked, "Well you know what they say about people from Louisiana, right?"

I thought, OK, here we go...

But he continued, "While y'all are eating breakfast, you're thinking about what to fix for lunch and while y'all are eating lunch, you're thinking about what to make for dinner. Bet you're a damn fine cook!"

True dat!

In before someone calls me a fattie, no. I'm not.

This sounds like a-hole but the pizza looks good. FOH with mayo on a pizza.

You guys are acting like I spread mayo on the pizza. I mixed two-three spoonfuls of sour cream with one big spoonful of mayo. mixed it together with the Franks to make a pizza sauce. It wasn’t straight mayo and it wasn’t a lot. It gave the sauce a tang and substance and didn’t taste like straight sour cream. Don’t knock it before you try it.

Next time you make mashed potatoes add a tablespoon or so of mayo and feed it to the mayo haters. They will want to know what is the secret to your delicious mashed potatoes.

Let them deal with it.

Would hollandaise work as a decent sauce for a breakfast pizza?

Doubt it, unless you stabilized it somehow. The high heat would most likely split normal hollandaise

Béchemel would be a pretty solid sauce to use here. You could flavor it heavily with black pepper or breakfast sausage to give the pizza a "biscuits and gravy" feel to it.
