I do. It’s easier to get some of everything on the spoon. Have always cut half moons or even medium quarters unless the links are small which is not normally the case.

I always split the sausage in half for gumbo and jambalaya. Better serving size and more surface to brown...much superior to a lazy, single cut slice.

Dumb take. When you have a large slice of sausage you can’t fit anything else on the spoon.
If you want a bowl of sausage then just cook sausage by itself.

Good thing you aren't forced to eat it. It is amazing. Had some tonight, wow. Enjoy your watery "soup", I'll stick to my sludge, full of flavor.

I mean if you zoom in on that last pic you can literally see 1/2” of oil sitting on top of the gumbo so he probably needs to cut back on his oil a bit for that size pot but at a minimum skim. Other than that looks solid.
