Mac and Cheese Recipe

We're doing a pot luck tomorrow at work and I've been tasked with bringing in a mac and cheese.

I've made it a few times before but I'm looking for something different to do this time around. Anyone have any recipes that they really like?

Pioneer Woman Mac and Cheese

This ain't from the actual Pioneer woman, but a blogger or something. I like to add some good ham chunks and a little caramelized onion as well to the mix.

Don't bake it though, unless you like that baked style curdled mac and cheese. Pour sauce and add some cheese to the top, then broil for a few. So damn good

There was a recent thread on mac and cheese, but I can't find it. Whatever recipe you use, a little roasted jalapeno and crispy thick smokey bacon mixed in changes it up. Jalapenos can vary in heat, so give the roasted mixture a little taste to get a gauge on how much to add. Delicious.

You can also vary the type of cheese. A smoked gouda is an addition that I enjoy.

This is my favorite nontraditional mac. It's expensive to make, but not $50 a serving like it is at the Waverly Inn.

Roasted Garlic M&C w/ Pancetta Parmesan crust

I made this a few nights ago, turned out awesome. I'm doing it again for work's Thanksgiving party. The recipe is lacking a bit when it comes to cooking temperatures, but it's not hard to figure out.
