Lucky So-n-So's Las Vegas Christmas Eat-a-Thon

Every couple years, I like to go to Las Vegas for Christmas. So this was the year to go, especially since Adele was in town (and I got to see her at Caesars). Otherwise, I go there to eat really well (and not so well). Here is a list of places I ate:
Not Pictured
In-n-Out Burger. Standard Double with fries. Excellent burger. Nothing life changing, really, but a great fast food burger.
Giordano's I've never had a Chicago style pizza, and what better place than Giordano's? I got a pepperoni/mushroom/onion/bellpepper pizza, and it was incredible. I thought I'd be able to crush it, but it crushed me. I like all styles of pizza, and deep dish did not disappoint.

Hash House-a-Go-Go This place speaks for itself. I got the "Andy's Sage Fried Chicken Benedict". I always get that. It has never disappointed. I eat at Hash House every trip to Vegas.
The Chubby Cattle This is a Chinese hot pot restaurant recommended to me by a friend. Thought I'd give it a try and it didn't disappoint. I've never eaten at a place like this, so I was an amateur. I was the first person there for the lunch service. After a while, there were quite a few people there, but I was the only non Asian. So I figured this place was legit. I got the tomato/oxtail broth, with cabbage, pork belly, and wagyu short rib meat. It's basically like The Melting Pot, but way better. The broth was outstanding, and a perfect complement to the meat. Could have done without the cabbage to be honest. I would definitely eat there again.
Mon Ami GabiHad a late breakfast there. Smoked Salmon Eggs Benedict and a Bloody Mary. The eggs benedict were really good. Cooked beautifully. The Bloody Mary was not great. They found the largest stalk of celery in the kitchen and shoved it in the glass. Did nothing for the drink.
Scarpetta(Cosmopolitan) I always try to have a really upscale dinner when in Las Vegas, and decided to try Scarpetta based on a couple of recommendations I got on this board. It was phenomenal. Everything was very fresh, superbly cooked, plated beautifully, and service was top notch. I got the Tasting Menu with the wine pairings. There was a pre-dinner aperitif, two whites, three reds, and a post-dinner fortified dessert wine. All but one ( a Super Tuscan) were delicious.

Obviously, being from Louisiana, I've had oysters as many ways as one can have them, but these really stand out.

parsnip, shallot “agro dolce”, pomegranate beef jus
Could literally cut this with a fork. As good a piece of steak as I've eaten.
NUTELLA BOMBOLONI
nutella & pastry cream filled doughnuts,
nutella ganache, banana gelato
Not a fan of Nutella, but this strange combination really worked and was a very nice end to the meal.

Pizza Cake
(Harrah's)
I was really looking for a good pizza joint. Pizza Cake was mentioned frequently in various Top Ten lists I found, so I thought I'd give it a try. I got a Pepperoni Slice and "The Don"(pepperoni, sausage, and a few other things). I was not impressed. Was absolutely LOADED with grease. Rotolo's pizza is better than Pizza Cake.
Wynn Buffet
It was good, but not what I thought it would be. Caesars (May this year) and Bellagio (pre-Covid) were much better. Most things were delicious, but not outstanding (like Caesars and Bellagio). So first is a list of what I ate, followed by pictures.

I have a good recipe for Scott Conant’s Scarpetta’s spaghetti. Pretty simple, and really good. Will post later.

How were the pancetta-wrapped scallops? On first though it doesn't sound like a complementary pairing, but evidently it's a thing. Just curious.

Excellent write up and pics. Cost per meal? We go 3 - 4 times per year but meals are usually an after thought.

Here is my version of Scarpetta's spaghetti. Started with a version found online and rewrote over the years as I've tinkered with the process.
Scarpetta’s Spaghetti
Serves 4
Basil-Garlic Oil:
1/4 cup extra virgin olive oil
6-8 whole cloves garlic
10 whole fresh basil leaves
Generous pinch crushed red chili pepper flakes
Sauce:
One large can of San Marzano or organic whole tomatoes (crushed by hand or potato masher)
2 tablespoons extra virgin olive oil
Pinch of crushed red chili pepper flakes
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 ounce freshly grated Parmigiano-Reggiano (about 1/2 cup)
6 to 8 fresh basil leaves, well washed and dried, stacked and rolled into a cylinder and sliced thinly crosswise into a chiffonade
1 pound De Cecco spaghetti
1. Basil-garlic oil. Heat a small saucepan over low heat with 1/4 cup olive oil, garlic cloves, basil leaves and pepper flakes. Keep the heat on low to allow the ingredients to warm slowly and release their flavors. When the garlic is lightly browned, turn heat off and let cool for 10 minutes. The longer you let the oil sit, the more infused the oil. Strain the oil, discarding the solids.
2. Sauce. In a wide pan, heat 2 tablespoons of olive oil over medium-high heat until quite hot. Add the tomatoes, red pepper flakes, and season lightly with the salt and pepper. Let the tomatoes cook for a few minutes to soften. Cook the tomatoes for 20 to 25 minutes, until they are tender and the sauce has thickened. (Can make the sauce, about 2-3 cups, ahead of time.)
3. Spaghetti. Bring to a boil. Cook the spaghetti in a large pot of salted water until just shy of al dente. Use glass measuring cup to scoop out and reserve a little of the pasta cooking water. Drain.
4. Use a wok to blend. Add the cooked pasta to the sauce and cook over medium-high heat, gently tossing the pasta and the sauce together with a couple of wooden spoons and a lot of exaggerated movement/shaking of the pan until the pasta is just tender and the sauce, if any oil had separated from it, now looks cohesive. (If the sauce seems too thick, add a little pasta cooking liquid to adjust it.) Remove the pan from the heat and toss the butter, basil and cheese with the pasta in the same manner (the pasta should take on an orange hue). Drizzle with just a bit of the basil-garlic oil on each plate (I mix some in during the cook/mix process too).

Haha you beat me to it. I’ve made it several times and it’s very good. It’s on the menu at most/all of his restaurants (Americano in Scottsdale, The Ponte in Los Angeles, Scarpetta in all cities, etc).
