Looking to upgrade my chefs knife but I want to physically feel it in my hand

I need suggestions as to where to purchase a knife but I want to physically feel the weight and grip of it before I buy it. I've recently ordered this knife which was recommended to me, but upon it's arrival I realized that I couldn't comfortably pinch the blade at the back of the spine due to a goofy bevel...
Had to send it back which was a bummer because I liked everything else about it.
I'm in Acadiana, but would take suggestions for Houston or anywhere really. We've a couple of restaurant supply stores here but nothing over the top as far as chef knives. Department store? Is there such a thing as a knife store? Yes I've tried a search, but being Louisiana, every knife search turns up a million hunting supply stores.

Just go to a restaurant supply and get a cheap mercer.
Use what we use in professional kitchens, a good cheap knife.
No reason to buy anything expensive unless you have a knife fetish. Cheap works just as well.

I have a "cheap" Dexter knife from the restaurant supply store that I've been using for years.

Targil's in Opelousas has lots of chef knives in cases that they'll let you hold.
There's LOTs of other spices and cookware to look at or purchase while you're there too.
Or
Get a college kid who's selling Cutco knives to give you a demo at your home or wherever...

Are you looking for anything in particular? The Kitchenary in the Oil Center carries Shun, Wustof, and maybe one or two other brands.

As mentioned Coutelier in NOLA is a great knife store. IMO they are heavy on the high-end craft made knives but definitely worth a visit. LINK
They acknowledge that their desire to sell cooking tools started when working in San Francisco Bay area restaurants. The top shop there is Bernal Cutlery which in the last 5 years has expanded from a tiny shop catering to pro cooks to a more inviting shop offering many neat cooking things as well as knives. LINK
That would be a major trip just to handle knives. Right now, it's 55F at Bernal headed to 66F. How's the temp in Acadiana?

The Victorinox Fibrox line should be available at most places like Williams-Sonoma or if you have a Cook's Warehouse in your area, they should probably have good ones.
Most high-end BBQ/outdoor kitchen places should have them, too.

Second the Dexter brand. Inexpensive, holds a good edge, easy to sharpen when needed and I love the ones with the nice grippy textured handles in that white hard plastic. It really keeps it steady in the hand when fooling with fatty type meats and needing to trim it up and cut into steaks, stew meat, etc..
